Heavenly Holistic Foods – Coconut Pancakes (Sugar Free)

This is a recipe from Amy a new friend of mine from Tasmania. She is a very creative chef who also has her own website called Holistic Healing & CFS. These coconut flour pancakes are divine. They are low allergy, high in fiber, high in protein, sugar free, grain free and full of coconutty flavour and goodness. They are very filling. I made these for my sisters birthday. I topped them with more coconut oil, my home made coconut cream kefir (which I will share with you soon) and berries. I generally double the recipe below.




2 eggs.

2 tablespoons of organic, virgin coconut oil/butter, melted.

2 tablespoons of coconut milk, alternative milk or even water works.

Preferred sweetener stevia, xylitol, raw honey to desired sweetness.

2 tablespoons of coconut flour.

1/4 teaspoon of celtic sea salt.

1/4 teaspoon of baking powder, preferably aluminium free.




  1. Blend eggs, oil, coconut milk, sweetener and salt together well with a hand held blender.
  2. Combine coconut flour with baking powder and mix thoroughly into the wet ingredients.
  3. Heat 1 tablespoon of coconut oil in a pan.
  4. Spoon the batter onto the hot pan making the pancakes about 2 1/2 to 3 inches in diameter.
  5. Batter is quite thick, but does flatten out as it warms. Makes about 8 pancakes.

    Thanks for the recipe, I made them a couple of days ago as I am desperately trying to cut sugar out of my diet (along with the white processed flours) and they were delish! I served them up as you did with plain full fat yogurt and thawed raspberries (oh and a very small drizzle of pure maple syrup). I will defo make these again 😉

      Howdy Brigitta!
      Glad you have been getting some joy out of the recipes. I think if all the worlds leaders ate coconut pancakes every morning the world would be a better place. Adding raspberries and yoghurt is a stroke of genius, few dishes don’t benefit from the addition of these two food stuffs. Pizza perhaps?

      Bon Appetit and keep up the good work on your diet discipline, it really pays off after a few months in terms of energy. Also look into filtering your water and completely avoiding gluten for a while to see if this helps as well.
